The US Food and Drug Administration has put into effect a seafood industry compliance standard: Hazard Analysis and Critical Control Point (HACCP). HACCP Compliance revolves around seven principles:

  • Analyzing Hazards
  • Identifying Critical Control Points (points during seafood processing where potential hazards can be controlled or eliminated)
  • Establishing preventative measures with critical limits for each Control Point
  • Establishing procedures to monitor Critical Control Points
  • Establishing corrective measures when a critical limit is not met
  • Establishing procedures to verify the system is working properly
  • Establishing effective recordkeeping to document the HACCP system
