The
US Food and Drug Administration has put into effect a seafood industry
compliance standard: Hazard Analysis and Critical Control Point
(HACCP). HACCP Compliance revolves around seven principles:
- Analyzing
Hazards
- Identifying
Critical Control Points (points during seafood processing where
potential hazards can be controlled or eliminated)
- Establishing
preventative measures with critical limits for each Control Point
- Establishing
procedures to monitor Critical Control Points
- Establishing
corrective measures when a critical limit is not met
- Establishing
procedures to verify the system is working properly
- Establishing
effective recordkeeping to document the HACCP system
